Parmesan Crusted Chicken with Tomato Basil Salsa

Parmesan Crusted Chicken with Tomato Basil Salsa

This is an awesome Italian-style chicken recipe. This Parmesan Crusted Chicken with Tomatoes and Basil Salsa recipe is simple to prepare and make, yet bursting with flavors!

Ingredients

For the Parmesan Crusted Chicken:

  • 4 boneless skinless chicken breast
  • ½ cup all-purpose flour
  • 1 teaspoon salt
  • ¼ teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 2 large eggs
  • 1 ½ – 2 cups shredded Parmesan cheese
  • 2 tablespoons olive oil
  • 1 tablespoon fresh lemon juice

For the Tomato Basil Salsa:

  • 4 Roma tomatoes, chopped
  • ¼ cup fresh basil, chopped
  • 2 tablespoons red onion, chopped
  • 2 tablespoons red wine vinegar
  • Salt and black pepper to taste

Instructions

Preheat oven to 350 degrees F.

Then, using a meat tenderizer, pound the chicken breasts to an even ½ inch thickness to ensure even cooking.

Afterwards, combine and mix the flour, salt, black pepper, garlic powder, dried basil, dried thyme, and dried oregano in a shallow bowl or plate. In another bowl, beat the egg. And in a third bowl or plate, place the shredded Parmesan cheese.

Next coat chicken in flour mixture, then dip in the egg, followed by rolling both sides of the chicken with the shredded Parmesan cheese.

In a large skillet coated with the olive oil at medium-high heat, brown the chicken on both sides, approximated 1-2 minutes per side. Transfer the chicken from the skillet to a baking pan coated with cooking spray. Drizzle fresh lemon juice on top of each chicken breast, then bake uncovered in oven for up to 20 minutes, or until juices run clear.

Meanwhile, combine and thoroughly mix the ingredients for the Tomato-Basil Salsa in a bowl. When chicken is ready to serve, place individual chicken on serving dish and garnish with Tomato-Basil Salsa by spooning on or next to the Parmesan Crusted Chicken.
