In a saucepan over medium heat, whisk in the milk until the mixture begins to simmer. In a separate bowl, thoroughly whisk together the egg yolks and sugar.
Slowly pour half of the warm milk into the bowl of egg yolk mixture, whisking continuously so that the eggs do not scramble. Next, pour the egg mixture back into the saucepan, followed by stirring in the heavy cream. Then, whisk in the vanilla and cinnamon. Continue to cook the ice cream mixture over medium heat for a few additional minutes, whisking constantly, until the mixture thickens enough to coat the back of a metal spoon.
Remove from heat. Pour the ice cream mixture through a strainer and into a large mixing bowl. It is important that you pour the mixture through a strainer to separate any bits of egg that may have scrambled and cooked solid. Set aside and allow to cool to room temperature, then place in refrigerator to chill through completely.
