Baked Salmon with Lemon-Butter Sauce and Capers
You have to try this easy-to-make, yet delicious Baked Salmon with Lemon Butter Sauce and Capers recipe. This salmon recipe features fresh lemon juice in a buttery sauce with flavors of garlic, fresh parsley, and capers.
Ingredients
- 4 salmon fillets (5-6 ounces each)
- 3 tablespoons of olive oil, divided
- ΒΌ cup butter
- 2 shallots, chopped
- 2 garlic cloves, minced
- 6 tablespoons capers, rinsed
- Juice and zest of 1 lemon
- 2 tablespoons fresh parsley, chopped
- Salt and freshly ground black pepper to taste
Instructions
Preheat the oven to 400 degrees F.
Sprinkle salmon with salt and black pepper on both sides, then drizzle 1 tablespoon of olive oil on both sides of salmon. Place salmon in a roasting pan pre-covered with tin foil.
Note: Use enough foil so that you can bring up sides to form a pocket around the salmon.
Meanwhile, melt butter and remaining 2 tablespoons of olive oil in saute pan over medium heat. Add shallots, garlic, lemon juice, lemon zest, capers and parsley. Simmer for 2-3 minutes. Remove from heat.
Spoon the lemon butter sauce over the salmon. Fold the sides of the foil over the salmon covering completely and sealing closed like a tent.
Place in oven and bake until the salmon is just cooked through and flaking easily, about 25-30 minutes.
