Bacon Ranch Potato Salad

Bacon Ranch Potato Salad

This Bacon Ranch Potato Salad recipe is a new twist on an old favorite. The mild ranch flavor and bacon crunch is unexpectedly delicious. It’ll go so fast you’ll wish you had made more!

Ingredients

  • 2 lbs of potatoes, boiled whole, cooled, peeled and chopped in 1” cubes
  • 1/4 cup plain yogurt
  • 1/4 cup ranch dressing
  • 1/4 cup mayonnaise
  • 4 slices extra thick bacon, cooked and crumbled
  • 1/2 tablespoon bacon grease
  • 1 celery rib,diced fine
  • 1/4 cub red onion, diced
  • Salt and pepper to taste

Instructions

  1. In a bowl, combine the yogurt, mayonnaise, ranch dressing and bacon grease.
  2. Add to the mixture celery, onion, salt and pepper.
  3. Gently fold in potatoes, a third at a time, until completely coated.
  4. Allow to rest covered in the refrigerator for at least 2 hours before serving.
  5. Then enjoy this Bacon Ranch Potato Salad!
