Bacon Ranch Potato Salad
This Bacon Ranch Potato Salad recipe is a new twist on an old favorite. The mild ranch flavor and bacon crunch is unexpectedly delicious. It’ll go so fast you’ll wish you had made more!
Ingredients
- 2 lbs of potatoes, boiled whole, cooled, peeled and chopped in 1” cubes
- 1/4 cup plain yogurt
- 1/4 cup ranch dressing
- 1/4 cup mayonnaise
- 4 slices extra thick bacon, cooked and crumbled
- 1/2 tablespoon bacon grease
- 1 celery rib,diced fine
- 1/4 cub red onion, diced
- Salt and pepper to taste
Instructions
- In a bowl, combine the yogurt, mayonnaise, ranch dressing and bacon grease.
- Add to the mixture celery, onion, salt and pepper.
- Gently fold in potatoes, a third at a time, until completely coated.
- Allow to rest covered in the refrigerator for at least 2 hours before serving.
