Carrot Salad
Light, sweet and zesty; this nutritious Carrot Salad dish is an easy way to enjoy eating a serving of veggies, and is a real crowd pleaser!
Ingredients
- 6 carrots, shredded
- 1 Granny Smith apple – peeled, cored and diced
- 1 tablespoon lemon juice
- 1/2 teaspoon lemon zest
- 2 tablespoons honey
- 1/4 teaspoon cinnamon
- 1 box 1.5 0z of raisin
- 6 tablespoons plain yogurt (optional)
- salt and pepper to taste
Instructions
- Combine well all ingredients in a bowl.
- Cover and refrigerate for at least 3 hours.
- Toss the Carrot Salad before serving.
Notes / Suggestions
Pineapple can be substituted for the apple in this Carrot Salad recipe.
