Summertime Pasta Salad

This pasta salad recipe is healthy and full of flavor. It’s a perfect pasta salad to prepare for any party or barbeque.

Ingredients

  • 1 pound of rotini pasta, cooked
  • 2 crowns of broccoli, chopped
  • 1/2 cup of grape tomatoes, halved
  • 1 small can of black pearl olives, halved
  • 1/2 cup of garbanzo beans (chick peas)
  • 1/2 cup of chopped fresh mozzarella
  • 1 cup of olive oil
  • 2 tablespoons of honey
  • 1 tablespoon of balsamic vinegar
  • 1 tablespoon of basil
  • 1 tablespoon of rosemary
  • 2 teaspoons of garlic powder
  • 2 teaspoons of black pepper

Directions

  1. Cook rotini pasta as directed. Drain and set aside to cool down.
  2. For the dressing, combine olive oil, honey, balsamic vinegar, basil, rosemary, garlic powder, and black pepper in small mixing bowl. Stir and set aside.
  3. In a large serving bowl, combine and mix pasta with broccoli, grape tomatoes, black olives, chick peas, and mozzarella.
  4. Stir in dressing.
  5. Then, place in refrigerator for 20-30 to chill before serving.
