Summertime Pasta Salad
This pasta salad recipe is healthy and full of flavor. It’s a perfect pasta salad to prepare for any party or barbeque.
Ingredients
- 1 pound of rotini pasta, cooked
- 2 crowns of broccoli, chopped
- 1/2 cup of grape tomatoes, halved
- 1 small can of black pearl olives, halved
- 1/2 cup of garbanzo beans (chick peas)
- 1/2 cup of chopped fresh mozzarella
- 1 cup of olive oil
- 2 tablespoons of honey
- 1 tablespoon of balsamic vinegar
- 1 tablespoon of basil
- 1 tablespoon of rosemary
- 2 teaspoons of garlic powder
- 2 teaspoons of black pepper
Directions
- Cook rotini pasta as directed. Drain and set aside to cool down.
- For the dressing, combine olive oil, honey, balsamic vinegar, basil, rosemary, garlic powder, and black pepper in small mixing bowl. Stir and set aside.
- In a large serving bowl, combine and mix pasta with broccoli, grape tomatoes, black olives, chick peas, and mozzarella.
- Stir in dressing.
- Then, place in refrigerator for 20-30 to chill before serving.
