Black Bean Corn Relish Black Bean Corn Relish

For those of you who love black beans, this recipe is for you!  Serve it over a bed of rice for dinner, or as a dip at your next party!  No matter what, everyone will think this Black Bean Corn Relish recipe came straight from south of the border.

Ingredients

  • 1 can of black beans (15 oz), half drained
  • 1 package of Birds Eye frozen corn kernels, thawed
  • 1/2 medium red onion, chopped
  • 1 pint of grape tomatoes, chopped
  • 1 tablespoon of Kikkoman Black Bean Sauce with Garlic
  • 1 tablespoon of honey
  • 1 teaspoon of olive oil
  • Fresh ground black pepper to taste

Directions

  1. Preheat olive oil in a large pan on medium heat.  Add onions and cook until soft and translucent.
  2. Add black beans, black bean sauce, and black pepper to onions in pan.  Cook for 6-8 minutes, mixing occasionally.
  3. Stir in corn and honey to mixture in pan, and cook for an additional 3-4 minutes.
  4. Remove from heat and stir in chopped tomatoes.

Notes / Suggestions

Try serveing the Black Bean Corn Relish over white rice (optional).
