All Occasion Cake

Ingredients
Cake:
- 6 eggs, separated
- 1 cup sugar
- 1 teaspoon vanilla extract
- 2 heaping teaspoons baking powder
- 1 cup flour
Topping:
- 1 medium can crushed pineapples
- 1 large can sliced peaches, undrained
- 1 1/2 pints of heavy cream, for whipping
- 3 teaspoons sugar
What You’ll Need:
- Wax paper
- 2 round 9-inch baking pans
- Mixer
Instructions
- Preheat oven to 350 degrees F.
- Then beat egg whites until foamy. Slowly add egg yolks to egg whites while beating, one at a time. Then mix in sugar and vanilla.
- In a separate bowl, add baking powder to flour and gradually add to the other ingredients and mix well.
- Pour half the batter into each round pan, both of which have already been lined along the bottom with wax paper.
- Bake in oven at 350 degrees F for 15 to 20 minutes.
- Afterwards, remove cake from pan and remove wax paper (it peels off easily), and allow set cakes aside. Allow to cool down.
- Meanwhile, whip cream with sugar until it peaks.
- Place the first layer of cake on a serving dish. Evenly spread crushed pineapples and 1 cup of whipped cream on top of cake.
- Then place second layer of cake over top of first layer. Drizzle peach juice evenly over entire top of cake.
- Spread rest of whipped cream generously over top of the cake, and along the sides. Decorate top of All Occasion Cake with sliced peaches.

I finally got a chance to make this cake yesterday, and I was very pleased with the results. You weren’t kidding when you suggested it would take less than an hour to make! So if you’re looking for a cake to make in a short period of time, this is perfect!
Although you’re making this cake from scratch, the process is very basic and simple to follow. I made one slight alteration to the ingredients by adding an extra teaspoon or two of sugar to the whip cream topping. Other than that, I followed the recipe as instructed and the cake came out great!
I like that this cake is versatile in that you can substitute the fruit to your liking, although I recommend at least trying what the recipe calls for first.
